【love seafood】鹽焗海蝦

鹽焗海蝦

這個菜式是從煮食谷得到啟發的
看見谷友煮鹽焗蟹
心思思又學整
今次用了急凍海蝦試試效果
煮法應該與谷友大致相同
只略加上自己的喜歡的調味
便煮成這道菜式
意想不到的是
少少咸更能帶出海鮮的鮮味!

鹽焗海蝦

材料:
急凍海中蝦 350g (6隻)
海鹽 250g

【醃料】
乾蔥頭 (切碎) 4-5粒
薑蓉 1茶匙
魚露 1湯匙
料理酒 1湯匙

做法:
1. 海蝦解凍、去腸、洗淨及瀝乾水份,加入醃料拌勻,醃不少於15分鐘;
2. 以中火燒熱鑄鐵鍋,加入海鹽炒2-3分鐘至全熱,先盛起一半海鹽,加入海蝦後,再把海鹽鋪在海蝦上面;
3. 加蓋以中火加熱30秒,小火焗5分鐘,熄火後多焗1分鐘即可。

備註:
1. 使用24cm staub的多功能煎炒鍋,高溫、鎖水、傳熱快;如使用其他鍋具,或需自行調整烹調時間;

另,附上去蝦腸的方法 (圖片非常嘔心)
1. 在蝦的背面,於蝦頸位落剪刀,從蝦頭到蝦尾的背部剪開 (不要剪斷),
2. 用牙籤挑出蝦腸,沖洗乾淨後瀝乾水份備用;
3. 切記,黑色幼身那條才是蝦腸,青色那些是蝦膏,撥開蝦膏便會發現蝦腸。
