醬燒豬肋骨 BBQ Pork Ribs

去DanRyan那類西餐廳
定必點一客BBQ pork ribs
嫩滑的豬肋骨配上特製的醬汁
真係食到啜手指
有時唔想出街食
都會去Aeon買一pack豬肋骨吃
一pack骨$7x架
絕不便宜
而且每次吃罷也很口渴
應該是太多香料醃製吧
又想吃、又不想外出、又不要太多醃料
唯一方法:自己整!

不過
靚的急凍豬肋骨可遇不可求 (尤其我家附近那間Aeon)
第一次煮這個菜是從街市買了一條新鮮肋骨
$8x 肉赤到呢
還要肥肉太多不好吃
之後某次逛Aeon見到有急凍巴西豬肋骨
$33 + 外觀靚仔
即買啦!
有了一pack靚肋骨
簡單加上少許醃料
便可製成充滿美式風味的醬燒豬肋骨

醬燒豬肋骨 BBQ Pork Ribs

醬燒豬肋骨 BBQ Pork Ribs

材料:(2-3人份)
急凍豬肋骨 600g
橄欖油 少許
鹽 1.5茶匙
羅勒(Basil) 1茶匙
麝香草(Thyme) 1茶匙
牛至 (Oregano) 1茶匙
BBQ醬 適量
白酒 1茶匙
白胡椒 White pepper 少許
紅椒粉 Paprika 少許 (非必需)
蒜味胡椒 Garlic pepper 少許(非必需)

做法:
1. 急凍豬肋骨先解凍、洗淨及瀝乾水份,然後塗上少許橄欖油,再把以上醃料均勻地塗抹在肋骨上(BBQ醬除外),醃不少於1小時 (醃一晚更好);
2. 預熱焗爐200度;另一邊,燒熱煎pan,把豬肋骨煎至表面微微金黃,熄火;
3. 把豬肋骨放在焗盤上,在肋骨與肋骨中間界一刀 (無需切開),然後在肋骨兩面均勻地塗上BBQ醬,放入焗爐焗40分鐘;
4. 焗至最後10分鐘,取出焗盤,再在肋骨表面塗上BBQ醬,放回焗爐焗至完成。

備註:
1.  烤焗時間需視乎焗爐火力和肋骨厚度,一般不少於30分鐘;
2. 在肋骨與肋骨中間用界一刀,可令肋骨更入味;
3. BBQ sauce可在超級市場購買這兩款,我用的是MC Cormick,另一牌子Lawry’s都是常見的,Lawry’s steakhouse最出名食ribs的,它的醬汁應該有一定水準吧。
