羅勒醬Pesto Sauce
Pesto sauce是我最愛的意粉醬
尤其係Eric Kayser食過那個意粉
那種淡淡的香草、橄欖和蒜香味
真係一試難忘
這個意粉醬重點是:新鮮羅勒
新鮮羅勒
新鮮羅勒散發著香濃的青草味
配上蒜頭、松子和橄欖的香味
真的非常清新可口
而且用的都是橄欖油
比忌廉醬汁更健康啊!
可惜新鮮羅勒不是常常買到
有次很想吃pesto sauce spaghetti
於是在超級市場買了一瓶pesto sauce頂癮
真的呢……難吃都不得了
完全沒有羅勒的清香 (說它臭又不是,總之很難吃)
結果~整碟意粉也吃不下
所以
要吃好的東西絕不能懶!
只要買到新鮮羅勒
都會大量製作這個羅勒醬
然後放在冰箱
吃時解凍便可!

羅勒醬 (青醬) Pesto Sauce

羅勒醬 (青醬) Pesto Sauce

材料:(約可製作200g羅勒醬)
新鮮羅勒 (fresh basil) 約90g
蒜頭 3/4個 (或 獨子蒜 3粒)
松子仁 (pine nuts) 120g
巴馬臣芝士(磨碎) 適量
初榨橄欖油 適量
鹽 少許
黑胡椒(磨碎) 少許

做法:
1. 先用平底鑊把松子仁烘烤至微微金黃色後,熄火備用;
2. 把蒜頭和羅勒放入食物處理器打碎,加入適量的鹽調味;
3. 加入已烘烤的松子仁入(2)再打碎;
4. 把(3)完成的混合物倒進碗中,加入適量的巴馬臣芝士碎和少許黑椒;
5. 最後加入橄欖油至喜歡的口感,完成。

備註:
1. 步驟(2) – (5)建議一邊試味,一邊調味;
2. 喜歡creamy口感可多加芝士;
3. 綜合過往經驗,city’super和一田的新鮮羅勒價錢化算,而且較為新鮮;吉之島經常無貨,就算有的都是大陸貨;同等份量fusion(百佳)貴$3-4,而且不太新鮮;Great是最貴的,但很新鮮;
4. 松子仁(pine nuts)可在百佳買hart這款,但價錢較貴;相反,價真棧那款價錢便宜1/3;
5. 吃不完的青醬,放在保鮮盒/製冰塊格內,存於冷藏庫,吃時取出解凍即可。

羅勒醬意粉 Pesto Sauce Spaghetti

材料:(2人份量)
意粉 / 長通粉 200g
蒜片 適量
洋蔥(切碎) 1/4個
羅勒醬 3-4湯匙

做法:
1. 意粉 / 長通粉按包裝上的時間指示煮熟,瀝乾水備用;
2. 煎炒鍋中火預熱,加少許油,把蒜片和洋蔥爆香;
3. 較低火,加入長通粉炒勻,最後加入羅勒醬(pesto sauce)拌勻即可。

每一口意粉都沾滿羅勒醬啊,非常香濃美味!
