【麵包機食譜】菠蘿煙燻豬肉Pizza

菠蘿煙燻豬肉比薩 Pineapple, Coppa Stagionata Pizza

話說前兩天收到pizza hut的新傳單
見到多款pizza
啟發了我去copy and cook
當然味道不可能跟pizza hut完全相似
但男人和姑仔也說好味
那應該很不錯吧
哈哈
由於有麵包機協助整麵糰
所以整個過程變得簡單了10倍
只需隨意加些材料
便製成一個homemade pizza

麵糰

麵糰材料:(2個20cm pizza份量)
高筋麵粉 240g
低筋麵粉 100g
即溶酵母 0.5g
鹽 10g
水 190ml

製作麵糰:
1. 把所有材料放入容器,選擇「薄餅麵糰mode」,按開始;
2. 工作枱上撤少許手粉 (高筋粉),放上揉好的麵糰 (一次發酵結束),麵壓麵糰排出空氣,再分割成2份,滾成圓球;
3. 蓋上溫毛巾,醒麵約20mins;
4. 用桿麵棍把麵糰推成20cm(6mm厚)的圓片;
5. 把圓邊向內推高,形成邊厚中間薄的形狀即成。

番茄醬

番茄醬材料:
橄欖油 1湯匙
蒜頭(切成蒜蓉) 1粒
鹽 3/4茶匙
水煮番茄一罐

做法:
1. 下油,爆香蒜蓉;
2. 加入罐頭番茄(連水)和鹽,熬煮至稠身即完成!

菠蘿煙燻豬肉比薩 Pineapple, Coppa Stagionata Pizza

比薩材料:(份量隨意+適量)
辣肉腸 (pepperoni)
煙燻豬肉 (Coppa Stagionata)
車厘茄
罐頭菠蘿
巴馬臣芝士碎 (Parmesan Cheese)
馬蘇里拉芝士碎 (Mozzarella Cheese)

做法:
1. 預熱焗爐250度,連烤盤同時預熱;
2. 把番茄醬均勻塗在餅底,然後鋪上材料,芝士碎最後鋪上,放在已預熱的pizza plate上,入焗爐焗10-12分鐘即成。

備註:
1. 這個番茄醬可作意粉醬,非常香濃;
2. 烤焗時間需視乎焗爐款式,一般焗8-10分鐘;而我家使用的是Panasonic「變頻式」烤焗微波爐 ,由於並非傳統焗爐的上下發熱線,火力均勻較,但相對夠不集中,故一般烤焗時間需要更長;
3. 桿麵棍使用的是Joseph Joseph那款,可以調較厚度,貴一點,但很方便。
