【麵包機食譜】日式手打烏冬

近日
見到朋友在fb post了很多日本旅行的相
想飛日本的心又再燃起 (fb是毒物!!!!)
但可能短期內都無得去
唯有自己係屋企玩下手打烏冬
當自己去了日本學師
慰藉一下空虛的心!(好可憐T_T)
不過
自家制的烏冬又真係非常紮實彈牙
口感絕對比得上在日本吃的烏冬
如果能配合一部烏冬機
那便完美了!(Mr Lion plsssssssssssssssssssssssssss)

日式手打烏冬 (麵包機食譜) 配日式照燒雞扒
日式照燒雞扒食譜在這裡
日式手打烏冬 (麵包機食譜)

材料:(2人份)
中筋麵粉 300g
鹽 12g
水 150ml

做法:
1. 將麵粉、鹽、水放入內鍋中;
2. 選擇烏冬/義大利麵條程式,按下開始鍵;
3. 15mins後,麵糰完成,關掉電源;靜置30mins醒麵糰;
4. 工作台撒少許手粉,放上麵糰,用刮刀切片2等分,分別桿成0.2cm原的麵片,再將麵條摺疊起來,切成寬0.5cm的麵條,拉開後均勻撒上手粉;
5. 鍋中放入大量的水煮沸,將(4)完成的麵條甩去多餘粉末後,放入鍋內煮10mins,用篩網撈起,放入冷水中。
6. 盛碗後,加入烏冬湯即成。

備註:
1. 步驟(4)必需讓麵片兩邊沾滿撒手粉,這樣切麵條時才不會粘在一起,較容易拉開;
2. 撒手粉可使用中筋麵粉;
3. 我是使用以下的日清中筋麵粉,吉之島 / city super有售。

烏冬湯可以買現貨或自家制
自家制都是非常簡單的

烏冬湯材料:
水 4-5碗
日本醬油 3-4湯匙
清酒 2湯匙
鰹魚粉 2茶匙
昆布 少許
糖 1茶匙
(份量可因應個人口味,自行調整)
