【香甜鮮果醬】藍莓果醬

藍莓果醬

之前整果醬都是用熬煮方式
味道和色澤易於控制
但礙於太花時間
今次只好用麵包機代勞
出來的效果和味道也很不錯

今次買了營養價值很高的藍莓
不要看它小小的顆粒
藍莓屬於果膠含量比較高的水果
所以煮出來的果醬容易成黏稠狀
加上我足足用了3盒藍莓
每一啖果醬都能吃到果肉
非常足料!

藍莓果醬

【麵包機做法】
材料:
新鮮藍莓 (3盒) 約375g
砂糖 140g
檸檬汁 2.5大匙

做法:
1. 容器先安上麵包用葉片;然後依次放入砂糖、水果和檸檬汁;
2. 選擇果醬模式,設定時間150分鐘。

【明火煮做法】
材料:
新鮮藍莓 (3盒) 約375g
砂糖 180g (砂糖份量比麵包機煮的增加40g至藍莓重量的一半)
檸檬汁 2.5大匙

做法:
1. 藍莓清洗後瀝乾水份,倒進鍋裡,加入一半砂糖,以小火煮;
2. 待水份解出後轉中火,熬煮約10-15分鐘;
3. 加入餘下的砂糖和檸檬汁,熬煮10-15分鐘,呈黏稠狀即成。


裝瓶方法:(圖可按此)

1. 消毒:玻璃瓶需煮滾消毒 (好似洗BB奶瓶般),然後放入焗爐烘乾;
2. 填充:果醬熄火後立即裝瓶,若有空隙,將瓶子叩叫桌面,排出空氣;
3. 脫氣:倒放30分鐘以冷卻,這時蓋子能用果醬的熱力消毒;最後蓋向上,放在裝滿水的盤內,待熱力散去,蓋子中央稍微凹陷,即完成脫氣。

備註:
1. 這個食譜是中低糖度(40%),更能保留果香,亦更健康;
2. 糖度愈高,果醬愈黏稠,保存期更耐;配合以上的簡單脫氣方法,可讓果醬放在冰箱裡保存2星期至1個月。
