雲呢嗱蘋果醬

星期日放假去了西貢閒逛
經過一間賣手工果醬的小店
門外擺放著不同味道的果醬供試食
試了2款味道 果味非常香濃
但價錢卻要$50-$60一小瓶
那時心想:自家製吧,成本較低!
於是買了一袋充滿果香的紐西蘭加拿蘋果
加了半支雲呢嗱條
多得麵包機協助下
煮晚飯的期間同時成功自製了3小瓶香濃蘋果醬
淡淡果香和雲呢嗱籽的香味
好味到不得了!
當然
沒有麵包機的朋友
也可以試試明火煮手工果醬的方法

雲呢嗱蘋果醬

打算整手工果醬的朋友
要有心理準備
就是……
吃過自家製的果醬,再也不會吃街外買的
因為自家製果醬的天然果香
是那些「有添加」的果醬無法媲美!

雲呢嗱蘋果醬

【麵包機食譜】
材料:
加拿蘋果 (去皮、去芯、切成1cm小粒) 淨重 400g
砂糖 140g
檸檬汁 半個
雲呢嗱條 半支

做法:
1. 先安上麵包用葉片;然後依次把砂糖、蘋果粒和檸檬汁放入容器內;
2. 選擇果醬模式,設定時間100分鐘;
3. 待時間顯示餘下30分鐘時,開蓋,加入已開邊的雲呢嗱條,同時用膠刮清除容器四周的蘋果粒;
4. 煮至糊狀、雲呢嗱籽已拌勻即成;
5. 最後,趁熱裝瓶。(裝瓶方法在這裡)

【明火煮食譜】
材料同上

做法:
1. 把砂糖、蘋果粒、檸檬汁和雲呢嗱條放入鍋內,靜置1-2小時;
2. 待渾出水份後,以中火煮至沸騰後,轉小火熬煮 (同時需邊煮邊將泡沫撈起);
3. 煮至糊狀即成;
4. 最後,趁熱裝瓶。(裝瓶方法在這裡)

備註:
1. 這個食譜是中低糖度(35%),更能保留果香,亦更健康;
2. 糖度愈高,果醬愈黏稠,保存期更耐;配合以上的簡單脫氣方法,可讓果醬放在冰箱裡保存2星期至1個月;
3. 用了紐西蘭加拿蘋果,果味香濃,而且價錢合理,適合做果醬;
4. 成本:蘋果一袋$16,雲呢嗱條(1/2條)$5,檸檬半個$2,糖$1-2 (大約)
